I · The Vision
An evening that feels inevitable

You described the night you want in a single line — "warm, unhurried, and a little romantic" — and everything here is built to deliver exactly that. Foxhollow's glasshouse does half the work for us: as the light fails the candles take over, and a hundred and twenty people lean a little closer over the table.

Our role is to make the food feel like part of the evening rather than an interruption to it. Passed canapés begin the moment guests arrive, a seated three-course dinner carries the heart of the night, and a late dessert table keeps the room together long after the last toast — every course timed to the evening you and James have planned.

II · The Proposed Menu
A menu for an autumn table

Built around what the Hudson Valley does best in mid-October — late-harvest squash, orchard fruit, game and root vegetables. Every course offers a vegetarian path, and the kitchen quietly accommodates the four gluten-free and two pescatarian guests on your list. Finalised at our August tasting.

A room that is quietly looked after

The best service is the kind you never notice. Our team works to a strict one-server-per-table-and-a-half ratio, so water glasses stay full, plates clear between courses without a word, and you and James never carry a single logistic on your own night. A dedicated captain runs the floor against the timeline on page six and answers only to your planner.

A bar to match the table

A five-hour hosted bar across two stations, built around your two signature cocktails and a wine list chosen to live alongside the menu. We provide the team, glassware, ice, mixers, and garnish; you provide the spirits and wine at cost through our licensed supplier, which keeps the bar generous without the markup.

Dressing the glasshouse

Foxhollow gives us the bones; these are the pieces that make the room yours. We coordinate every rental directly with the venue and our preferred house, so a single invoice covers the lot and one team handles delivery, setup, and strike.

Tables & Linen

Twelve 60" rounds and one 16' head table, dressed in heavy ivory floor-length linen with bordeaux napkins, folded at each cover.

China, Glass & Flatware

Warm-ivory china with a fine gold rim, gold-handled flatware, and crystal stemware — three glasses per cover.

Candlelight

Tapers and votives down every table and along the glasshouse beams — the centerpiece of the whole evening's light.

Bar & Lounge

Two dressed bar fronts, a back-bar display, and a small lounge vignette by the dessert table for the late hours.

Timed against your ceremony and run by the captain so it never feels managed. Adjusted with your planner at the final walkthrough.

Everything, in one figure

Quoted complete — no surprises on the final invoice. The per-guest figure carries the food: canapés, three courses, and the dessert table, plated and served. Service, bar, and rentals are itemised below it. Spirits and wine are billed separately at cost through our licensed supplier.

We are a small kitchen by design — the chef who cooks your August tasting is the chef on the line on the 17th, and we take a single wedding per weekend so yours has the whole team. Twelve years of evenings like this one stand behind every plate.

Clear from the first course

Reserving the date

A 40% deposit and a signed proposal hold the 17 October date exclusively. We take only one wedding that weekend.

Counts & balance

Final guest count is confirmed 21 days prior; the balance is due 14 days before the event. Minor count changes are easily accommodated.

The tasting

A private menu tasting for up to four guests is included, scheduled in August to finalise courses and any dietary swaps.

If plans change

Deposits are transferable to a new date within twelve months, subject to availability. Full terms accompany the agreement.
